Ever heard of Shrove Tuesday? How about Pancake Day? Or Even Fettisdagen? (Only Swedes will get this one).

In England, Shrove Tuesday/Pancake Day is the day when everyone eat pancakes. It was born out of the countdown to lent, when people would get rid of all the foods they weren’t going to eat for the next forty days. While the religious element of it is no longer as widely celebrated as it once was, people still love pancakes, because well, duh.

So we thought, how about we show you guys a few great pancake recipes that you can enjoy with a smile on your face, knowing that your journey to health has not been impacted?

Yes, cottage cheese pancakes. These pancakes require only three ingredients, are low-carb, gluten-free, and loaded with protein. Now that is a good pancake. Once the pancake mixture is sorted, it’s up to you how you choose to spice these up. Top them with honey or maple syrup, a little yogurt and strawberries, or banana. Either way they’ll be delicious, and if you’ve blended the batter, they’ll be nice and light.

2-ingredient Pancakes

Can’t do dairy? We’ve got you covered. For this recipe, all you need is banana and egg. No butter, cheese, or milk necessary. Mash up some banana, mix in some eggs – fry et voila. This recipe calls for butter or oil, but we recommend coconut oil to add a little flavor. Then you can top it with honey, fruit and coconut flakes – who doesn’t like the sound of that?

We didn’t name these, the recipe’s author did. Safe to say we’re sold on the whole thing. These delicious pancakes are done on a base of mashed sweet potato and coconut milk – I mean come on – they were always going to taste incredible. The best part of this recipe, after the taste of course, is the content. These are vegan, gluten-free, oil free and grain free. If you can find a person who can’t eat them, we’ll be in shock.
